Black–eyed peas are a variety of the cowpea and are part of the family of beans & peas . Although called a pea, it is actually a bean. Both peas and beans are legumes, and both have edible seeds and pods. It is called beans in Africa.
I love this peas or beans so much and l have lots and lots of ways of preparing it which l would like to share, no matter which recipe chosen this food is always delicious.
Palm oil or vegetable oil
Salt/ maggi to taste
Little dried fish
Rinse beans and put in a pot and add much water to cook, Boil till very soft. Sometimes l add potash to boil so it cooks soft fast. Add salt to taste, allow to cook till water dries off the pot.
Bring off stove. Put oil or vegetable oil into a pot and add sliced onions to it. then add pepper, crayfish and fish. allow to simmer for 5minutes then pour into beans. place beans on stove again.
Allow for another 3minutes add maggi to taste. Then bring down from stove. Fry or boil ripe plantain and serve with it. A good meal for lunch or dinner.
