Schooling and living with an Efik foster family in Calabar Cross River State sure had its advantages on me, it sure open up the opportunity of learning to prepare different types of meals for my family today.
One of such delicacy I relish is the Efik fisherman stew, I love this special dish so much not only for its simplicity and richness but also that it can be used to eat just about anything.
So here it is Efik Fisherman’s stew
Fresh fish (fresh or salt water cat fish or mud or the nurtured catfish)
1 big Tin Tomato Paste
2 Large red onions
Fresh hot pepper
Sweet bell pepper (tatashe)
Curry powder or leaves
Maggi cube or knorr cube
Wash cat fish very well with warm water and salt or alum, put in a pot add one sliced red onions, some water salt and one cube to steam. stem for 5-10 minutes., Put pot on stove with vegetable oil, add remaining onion sliced, add blended bell pepper and fresh pepper. Allow to fry very dry in in pot add the tomato paste. Stir and add sauce from the steamed fish (boiled).
Leave to steam for 3minutes then add the fish, add curry powder or leaves, then add Maggi or knorr cube then leave to simmer for 5 minutes at a medium heat, them put down.
Can be taken with Eba, white rice, fufu or Agidi.
